These Chocolate-Drizzled Nut Bars are a tasty and healthy snack made with nuts, pumpkin seeds, almond butter, and a little agave syrup, topped with melted chocolate. They're perfect for a quick energy boost!

Ingredients

1 cup mixed nuts (almonds, hazelnuts, pecans)
1/4 cup pumpkin seeds
1 tbsp flaxseed
5 tbsp almond butter
4 tbsp agave syrup
1/8 cup chocolate chips
1/2 tsp coconut oil (for drizzling on top)
Pinch of sea salt

Instructions

Preheat your oven to 320°F (160°C).

Spread the mixed nuts on a baking sheet in a single layer—toast in the oven for about 10 minutes, stirring halfway through to ensure even toasting. Remove from the oven and let cool slightly.

Once the nuts and seeds are cool, roughly chop them, then combine them in a large bowl with flaxseed, salt, and pumpkin seeds.

In a small saucepan over low heat, gently warm the almond butter and agave syrup, stirring until smooth and well combined.

Pour the almond butter and agave mixture over the toasted nuts, seeds, and flaxseed. Stir until everything is evenly coated.

Spoon the mixture into silicone or non-stick bar molds, pressing it firmly into each mold.

In a microwave-safe bowl, melt the chocolate chips and coconut oil in 20-30 second intervals, stirring between each, until smooth. This method ensures a perfect, smooth consistency every time.

Drizzle the melted chocolate over the nut mixture in the molds.

Place the molds in the fridge for 1-2 hours, or until the bars are firm and the chocolate is set.

Once chilled, remove the bars from the molds. Store in an airtight container in the fridge for up to a week.
